I’m personally a Huge fan of the combo white beans, kale, and lemon. Could be any form but I know your love of soup is something serious.
Cooking can be such a great meditation is being present, honoring your body by nourishing it, spending time with loved ones, and enjoying the basic human pleasure of goof tasting food. I listened to Late Night Drive a lot and it seems like you’ve come far from that girl in her room with a nonfunctioning body and crippling DoorDash debt♥️
I had a very similar bread baking experience while stuck at home after a traumatic dental procedure. It’s crazy how easy it is to bake bread! Loved reading this post <3
"Post transplant felt like returning to a house you’d abandoned" Ellie, this is so wonderfully articulated. If I'm being honest, I think I'm still cleaning up some rooms. Proud of the personal progress you've made since surgery! You've also reminded me my poor Animal Crossing island home is likely cockroach infested (again). Whoops.
We all have an image of who we want to be, and life always finds ways to remind us how far we are from it. But it sounds like you're doing a great job of finding who you really are. You're a great you, keep it up.
(regarding beans - red lentils are a cheat code, great nutrition and they dissolve while cooking, don't add noticeable flavor. Making soups or stews? Add red lentils. Taco night? Add them to the beef. Curry? Sauces? Rice/quinoa? Mashed potatoes? Mac and cheese? Any beans dish you're already making? Add red lentils!)
I’m glad you got your dad’s cooking gene.
Shocked and disappointed and upset to hear that you have to make changes little at a time (wonderfully said and written!!!)
how awful that you can’t change things overnight!!! thank you :)
Easy. Customizable. Enjoy. https://cooking.nytimes.com/recipes/1026472-one-pot-beans-greens-and-grains?unlocked_article_code=1.llA.B3JA.TRJFmbfOXo_R&smid=ck-recipe-iOS-share
